As we ring in May and the weather warms, why not enjoy some light, but substantial, salads courtesy of everyone’s favorite “Everyday Italian” herself?  Giada de Laurentiis — who recently made headlines when she said that she left Food Network because she “got burnt out” — has a deep catalogue of sensational recipes, but some of her best are her rich, satisfying salads, which combine bright, refreshing ingredients with flavorful additions, sharp mix-ins and crunchy garnishes.  Note that these are by no means all vegan or vegetarian, but of course, with some swaps here and there, they certainly can be made with only plant-based ingredients. Each salad includes varying colors, textures and flavors, which all the best salads always do. “I got burnt out”: Giada De Laurentiis said her decision to leave Food Network was not an easy one

Giada De Laurentiis is opening up about why she left the Food Network after serving as a popular television host for more than two decades. In a new interview on Rebecca Minkoff’s podcast “Superwomen,” De Laurentiis revealed what encouraged her to exit the network and focus on her lifestyle brand, Giadzy. “I would switch gears without knowing it every seven years. So I did ‘Everyday Italian’ for seven years. Then I got pregnant, and I was like ‘OK I can’t do that show anymore. I got to do a reincarnation of the show because I’m now pregnant. I’m a different person,’” De Laurentiis said. She continued, saying she “was lucky enough to be at a period of time” at Food Network where she had control over her own projects. “The landscape hadn’t really been fully discovered yet, and so I think they were just more open to the talent,” she said of the network. Giadzy says this dish is comprised of “roasted beets, fresh orange segments, meaty Castelvetrano olives, herbaceous kale, crunchy hazelnuts and tangy feta cheese” … and that about sums it up, does it not? What a terrific combination!    If need be, feel free to omit the feta so this is fully vegan. The bright, pungent dressing of apple cider vinegar, orange juice, orange zest, olive oil and salt is simple, but amazingly delicious, so be sure not to skimp on it. The hazelnuts might be the secret star here, though; they add such texture and crunch.    Source link
